Yummy Chicken Vegetable Soup Recipe
I changed this up some based on the contents of my refrigerator. My chicken tenders were slightly frozen when I started, so I started on high (4 hr setting) for about an hour and half with the celery, carrots and onions. I used 8 cups of chicken stock and increased the spices accordingly. Then I added in a mixture of frozen peas and green beans (what I had) along with a drained and rinsed can of small white beans. Cooked on the 6 hr setting for about 3.5 hrs and found my chicken was very done (my fault, using thinner chicken tenders). At this point I added the zucchini as noodles (used my mandolin to slice) and set to warm. The spice mixture is very tasty and a nice change from our normal chicken soup! I served with a crusty Italian bread and everyone was happy.

Mel, this soup is delicious. My question; can it be frozen? It is only for me and I freeze most of my meals in small containers to be thawed in fridge and cooked as needed. Was thinking cream cheese would not freeze well. Thanks again for so many great recipes.

I made this meal last night. It was what I was hoping it would be, on point! Because I only had an entire chicken, I roasted the chicken on the rack with a drip pan with four cups of water below to generate the broth needed. I used only a little canola oil, salt, and pepper. I made this delicious soup with homemade biscuits and with the remaining dark me I made another meal. Thanks for this recipe!!!!!
Just made this recipe, I boiled chicken thighs with the bones and skin to make the broth, and then just pulled the meat. Also substituted egg noodles for the potatoes. A little poultry seasoning, thyme, and salt. I did have to add some more broth. My husband loves it. Wonderful recipe!
I made this for dinner tonight, and the highest possible compliment that could be payed for this meal is that my non-soup-loving men- 6 years and 31 years- LOVED this! They both ate seconds and one had thirds! This was fabulously delicious! thanks so much for another great recipe:)

Just made this for dinner, and it was delicious! I cut up the raw chicken and added it with the veggies, and used garlic powder instead of the cloves. It was really good, and my kids liked it. Thanks for the recipe.

Is this the recipe from Family Fun that originally uses about 2 cups of half and half? Love that soup, hate the calories! I think this is a great way to get the same flavor with fewer calories, especially if light cream cheese was used. Thanks!
